Ingredients for 2–3 servings
- Cod fillet – 600 g (about 1.3 lb)
- Leek – 100 g (about 3.5 oz)
- Sour cream – 150 g (about 2/3 cup)
- Gouda cheese – 80 g (about 3 oz)
- Salt – to taste
- Ground black pepper – to taste
Step 1/7 – Season the cod
Season the thawed cod with salt and pepper to taste. Make a little “boat” out of heavy-duty foil, sized to fit your portion, and place the fish inside.

Step 2/7 – Prep the leek
Slice the leek into thin half-moons.

Step 3/7 – Grate the cheese
Grate the cheese on the large holes of a box grater.

Step 4/7 – Add the leek topping
Sprinkle the finely sliced leek evenly over the fish.

Step 5/7 – Spread the sour cream
Spread a thin layer of sour cream over each fillet.

Step 6/7 – Top with cheese
Sprinkle the grated cheese over the top.

Step 7/7 – Bake in the air fryer
Place the foil boats into the air-fryer basket and cook for about 20 minutes at 180°C (about 355°F) until the fish is cooked through and the top is nicely browned.
